Toasted Coconut Hemp Bars

Once you go the way of Jedi health it seems that the good side of the force is firmly in the side of coconut. It's such a versatile ingredient. Adding some heart-healthy hemp seeds to this snacking recipe makes the quality of life that much more awesome.

These coconut bars are gluten-free, grain-free, paleo, vegan and aside from toasting the coconut, no-baking is required. They taste quite sweet but the sugar content is a fairly low per portion with only 1/3 cup of natural sweetener in the entire recipe. They’re sweetened with raw honey and only contain a handful of other wholesome ingredients.

Here's What You Need...
INGREDIENTS
  • 1 1/2 cup unsweetened shredded coconut, toasted

  • 1 cup cashew butter

  • 1 cup hemp seeds

  • 1/3 cup raw honey

  • 1 tsp cinnamon

  • 1/4 cup chopped dates

  • chopped dark chocolate (optional)

INSTRUCTIONS
  1. Preheat the oven to 325°F.

  2. Spread the coconut on a baking pan and bake for approximately 5-10 minutes or until thoroughly browned and toasted.

  3. While the coconut is toasting, mix the other ingredients together in a bowl.

  4. Add the toasted coconut. Mix well.

  5. Press the mixture into a wax paper or saran-lined 8×8 baking dish and refrigerate for at least 3 hours, preferably overnight. Make sure you spend some time really pressing it down into the pan.

  6. Once it’s set, lift from the pan and cut into 16 squares.

  7. Store in a container in the fridge.
